Whisky Pumpkin Pie

Whisky Pumpkin Pie

Ingredients

  • 2 unbaked 8" pie shells
  • 2 cups pumpkin puree (or canned pumpkin - NOT canned pumpkin pie filling)
  • 1 cup whole milk
  • ¼ cup rye whisky
  • 3 eggs, separated into yolks and whites
  • ¾ cup sugar
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cloves
  • ? teaspoon mace

Instructions

  1. Use your favourite pie crust recipe and make enough for two 8" pies.
  2. Combine the sugar and the spices and set aside.
  3. Stir together the pumpkin, milk and whisky until smooth.
  4. Beat the egg yolks with a whisk and add to the pumpkin mixture.
  5. Stir the sugar and spice blend into the pumpkin mixture.
  6. Whip egg whites until stiff but not dry. Stir a spoonful of the pumpkin mixture into the beaten egg whites and then fold the egg whites into the pumpkin mixture. Mix carefully, making sure that the egg whites are fully incorporated and that you don't have any pockets of egg whites because this will give the pie a grainy texture.
  7. Pour pie filling into the pie crusts and bake at 350 degrees for 45 minutes, until the pie filling is set.

Pumpkin-CookieYou’ve probably noticed that in the fall, everything starts coming up pumpkin.  There is that ubiquitous pumpkin spice latte started by a coffee shop that shall remain nameless (shhh!) and copied by everyone from Timmy’s to that little company with the golden arches.  And, it seems, pumpkin spice is one of the most popular flavours to come out of this year’s New York Fancy Food Show.  No longer is that mellow, sweet and aromatic spice combo that flavours your Thanksgiving dessert only for lattes and pies.   As soon as the school bells ring in the fall – it’s Pumpkin Spice Time!

This season, there are many choices on offer to tempt your taste buds: pumpkin spice frozen waffles, pumpkin spice yogurt, pumpkin spice ale, pumpkin pie gum, and pumpkin spice vodka to name but a few.    There’s an excellent list here, along with reviews of many of the offerings this season.  Trader Joe’s seems to have particularly embraced the notion of putting pumpkin pie spice in everything!

Packaged-PumpkinSpice (2)Some of these offerings go a little further and add pumpkin to the mix: there’s pumpkin gelato , pumpkin loaf, pumpkin scones, pumpkin creamer for your coffee and even pumpkin pop tarts for the kid in you.  Well, here at Sable Shortbread, we could not resist trying our hand at something pumpkin-y, so please welcome the newest addition to our lineup:  Pumpkin Spice Shortbread!  We’ve mixed up a batch of Great Grandma’s pumpkin pie spice blend and added it to our shortbread along with a dash of real pumpkin.  It’s like a slice of pumpkin pie in a cookie.

Mini Pumpkin PieAt our house, we’ll be making pumpkin pie for Thanksgiving again this year.   Sometimes we make it into individual tarts instead of one big pie.

We can never have pumpkin pie without remembering the first Thanksgiving with a very special new Flame Point Himalayan kitten some years ago. He was about 3 months old when he discovered pumpkin pie.  I was expecting the whole family for Thanksgiving dinner and I had made two pies and left them on the counter to cool; I covered them with a tea towel and went to bed.  We didn’t know then that the kitten had learned how to get onto the countertop.  So there were no worries that he could get into the pie, right?  Well, when I got up in the morning, I noticed that the tea towels had been moved.  And right across the middle of each pie was a line of tiny little paw prints and there, beside the pies was an adorable little kitten, licking pumpkin pie off his paws.
