When we started Sable Shortbread we wanted to bake real cookies using real ingredients that are as much a joy to eat as they are to create. We work every day to fulfill that mission.
 
We wanted our cookies to taste of real, whole ingredients. Our flour and sugar are organic.
 
Conventional flour is bleached…bleached flours have had all their germ and bran content removed. The process can leave the flour with a bitter aftertaste.
 
On the other hand, organic flour is milled from pesticide-free grain and grown in soil only fertilized by natural substances. The flour is not artificially processed or bleached and must be free of artificial food additives.
 
A study by Organic Center found that organic wheat grown in pesticide free environments developed more robustly, allowing plants to draw in more minerals from the soil. This makes organic flour healthier and more nutritious. One of the benefits of organic flour is that it is a good source of protein.
 

Now we may be biased, but we also think everything we make with organic flour just tastes better!!
